Harvest never feels more alive than on the Terravant crush pad, as bins of grapes are received cold straight from vineyards across California. Here, alternating proprietor winemakers can trust that their harvest yield data is reliably measured as they carry on towards crush.
This selective processing machinery improves quality and efficiency during the custom crush process. It de-stems grapes with high integrity for keeping the berries and stalks whole and intact by using gentle vibrations as it feeds the grapes down to the sorting tables. Immature grapes, seeds, and other debris are eliminated, allowing for green waste disposal during the process.

At Terravant, we have not one, but two Diemme basket presses, designed to provide gentle pressing and skin contact for red wines.
Tanks in our cellar can be used for open-top fermentation, the first inside layer of the larger tanks uses propylene glycol that is chilled to 40°. Caps are punched down in order to keep yeast thriving, eliminate mold, and introduce oxygen into the wine as it ferments.
This German-made filtration system takes wine down to 0.3 micron stability where all yeast and bacteria is removed. Raw wine comes in and passes through four passive filtration modules with thousands of fibers, filtering 10-40 gallons per minute, depending on the amount of solids introduced into the raw wine during crush and punchdowns. Unless a wine needs alcohol removal, the Oeno-flow is the last step in the cellar for a red wine before bottling.
The Memstar® unit allows you to hit the perfect ABV to suit the flavor profile of your wine and keep you in your intended tax classification for alcohol percentage. It also removes VA (vinegar acidity) by passing wine through a high pH canister of resin beads electrically charged with sodium hydroxide to initiate true reverse osmosis. For greater sustainability and reduced waste, the leftover alcohol goes into a distiller to turn it into high-proof to be used for sanitation.
When a white wine is ready for bottling, it goes through the S-T-A-R-S® unit for electrodialysis cold-stabilization of the wine. Traditional cold stabilizing requires cooling the fermentation tank itself and waiting up to three weeks for the solids to precipitate and stick to the inside jacket of the tank. With the S-T-A-R-S® unit, as much as 3500 gallons can filter in about 12 hours, as wine flows through one layer, while water and sulfuring acid goes through another, with electric charge running through the stack, making the potassium ions cling to the sulfuric acid.
The Bertolaso purges the glass of any debris using neutral nitrogen, which also minimizes bottle shock to the wine itself. The self-evacuating filler bowl tops off the bottle perfect to prevent spills when it is uncorked to the consumer. The line operates at greater than 1 bottle every second, providing high efficiency bottling operations, automated cork and capsule closures, and customized front, back, or wrap label application.
